If I lived in a perfect world I could spend hours on end experimenting in the kitchen…then have someone clean up the mess I make. BUT unfortunately that is not the case! In between work, kids, laundry, running errands…you get the point. Sometimes dinner needs to quick easy and taste good. I found this recipe while looking through some of my old cookbooks.
BBQ Rice Round-Up
1 pound lean ground beef
1 (6.8 ounce) package RICE-A-RONI beef flavor
2 Tablespoons margarine or butter
2 cups frozen corn
1/2 cup prepared barbeque sauce
1/2 cup (2 ounces) shredded Cheddar cheese
1. In large skillet over medium-high heat, brown ground beef until well cooked. Remove from skillet; drain. Set aside
2. In same skillet over medium heat, sauté rice-vermicelli mix with margarine until vermicelli is golden brown.
3. Slowly stir in 2 1/2 cups water, corn and special seasonings; bring to a boil. Reduce heat to low. Cover; simmer 15-20 minutes or until rice is tender.
4. Stir in barbeque sauce and ground beef. Sprinkle with cheese. Cover; let stand 3 to 5 minutes or until cheese is melted.
Makes 4 servings
Tips: Salsa can be substituted for barbeque sauce. I also have used canned corn and it tasted just as good.
I really like this recipe because it can be used for lunch the next day. It reheats very well.
