When I was little my grandma used to make this for us with her home canned tomatoes but I make it with store canned tomatoes. It is an easy stove top recipe that kids love!
- 1 large onion, chopped
- 1 tablespoon olive oil
- 1 lb ground beef, browned and drained
- 2 (16 ounce) cans stewed tomatoes
- 8 ounces elbow macaroni, uncooked
- salt, to taste
- pepper, to taste
- parmesan cheese (optional)
Saute onions in olive oil until translucent.
Brown ground beef and drain.
Add ground beef, tomatoes, salt and pepper to the onion.
In separate pot cook macaroni according to package directions
Drain cooked macaroni and add to mixture cook for 5-10 minutes until heated through
If desired, top with Parmesan cheese.
Serve with crusty bread and a salad.
