Now that most kids are out of school this is an easy no bake cookie that your kids will love!
1/2 cup (1 stick) butter or margarine
2 cups powdered sugar
1-1/2 cups graham cracker crumbs
1 cup peanut butter
1-1/2 pkg. (12 squares) (I use Baker’s) semi-sweet chocolate
Line a 9×9-inch baking pan with foil, with ends of foil extending over sides of pan. Set aside.
Melt butter. Add sugar, graham cracker crumbs and peanut butter; mix well. Spread into prepared pan.
Microwave chocolate in double-boiler (or microwaveable bowl on high for1-1/2 to 2 min.) until melted, stirring consistently. Cool slightly; pour over peanut butter mixture in pan. Refrigerate 1 hour or until set (I go into the fridge every 15 minutes or so to cut through the chocolate layer – otherwise the squares will crack/break and not look pretty – this is really necessary).
